Instructions
Preheat your oven to 350°F (175°C).
In a large pan, heat the olive oil over medium heat. Add the onions and sauté until translucent.
Add the roasted red peppers and tomatoes to the pan. Cook for about 10 minutes until the vegetables are soft.
In a separate bowl, mix the yogurt and feta cheese together until well combined.
Add the yogurt and feta mixture to the pan with the vegetables. Stir well to combine.
