Instructions
Prep the Filling: In a large mixing bowl, combine the chopped spinach, crumbled feta cheese, and beaten eggs. Add the chopped onion and minced garlic if desired. Season with salt and pepper to taste.
Prepare Phyllo Dough: Preheat your oven to 350°F (175°C). Carefully unroll the phyllo dough. Cover the sheets with a damp towel to prevent drying out.
Assemble the Pie: Brush a baking dish with some olive oil or melted butter. Lay down a sheet of phyllo dough and lightly brush it with oil or butter. Repeat this process, layering about half of the phyllo sheets.
Add Filling: Spread the spinach mixture evenly over the layered phyllo sheets.
Top Layers: Continue layering the remaining phyllo sheets on top of the spinach mixture, brushing each sheet with oil or butter.
Bake: Once assembled, lightly score the top few layers of the pie with a knife to make serving easier. Bake in the preheated oven for 40-45 minutes, or until the pie is golden brown and crispy.
