Ingredients

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 cup mushrooms finely chopped
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1/2 cup breadcrumbs
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (optional, for garnish)

Instructions

  • Cook the Mushrooms: Heat the olive oil in a skillet over medium heat. Add the chopped onions, garlic, and mushrooms. Cook until the mushrooms are soft and the onions are translucent.
  • Prepare the Burger Mix: In a food processor, combine the cooked mushroom mixture, chickpeas, breadcrumbs, and spices. Pulse until well combined but still slightly chunky.
  • Form the Patties: Shape the mixture into burger-sized patties, pressing them firmly to hold together.
  • Cook the Patties: Heat a little more olive oil in the skillet over medium heat. Cook the patties for 3-4 minutes on each side, or until golden brown and crispy on the outside.
  • Serve: Serve the patties on toasted buns with lettuce, tomato, avocado, and your favorite sauce or vegan mayo.
