Ingredients

  • 2 cups dried white beans pre-soaked
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1 can 14 oz diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • In a large pot, heat olive oil and sauté the chopped onion until translucent.
  • Add minced garlic and sauté for another minute until fragrant.
  • Add pre-soaked white beans to the pot and cover with water.
  • Stir in diced tomatoes and paprika. Season with salt and pepper.
  • Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1 hour.
  • Check the beans for tenderness. Once they're soft, remove from heat.
  • Use a potato masher or the back of a spoon to slightly mash some beans for a thicker consistency.
  • Garnish with fresh parsley before serving.
