Huacatay Sauce Recipe

Huacatay sauce is a vibrant and flavorful Peruvian green sauce, perfect for adding a fresh, spicy kick to meats, grilled dishes, and more. This easy-to-make sauce combines the unique flavors of huacatay with cilantro, aji amarillo peppers, and lime juice, creating a delicious condiment that enhances any meal.

Ingredients

  • 1 cup fresh cilantro leaves
  • 1/4 cup huacatay paste or fresh huacatay leaves
  • 2 aji amarillo peppers or 1 jalapeno, seeded
  • 2 cloves garlic
  • 1/4 cup lime juice
  • 1/2 cup mayonnaise
  • Salt to taste

Instructions

  • Prep the Ingredients: Rinse the cilantro leaves and huacatay leaves (if using fresh). Remove the seeds from the aji amarillo peppers or jalapeno.
  • Blend the Ingredients: In a blender or food processor, combine the cilantro, huacatay paste, aji peppers, garlic, lime juice, and mayonnaise. Blend until smooth.
  • Season to Taste: Add salt to taste and blend again to incorporate.
  • Serve or Store: Pour the sauce into a bowl and serve immediately, or transfer to an airtight container and refrigerate for up to a week.
