Majadito Recipe

Majadito is a traditional Bolivian rice dish featuring shredded beef jerky, vibrant vegetables, and a perfectly fried egg on top. This hearty and flavorful meal is a staple in Bolivian cuisine, offering a taste of the country's rich culinary heritage.

Ingredients

  • 2 cups of rice
  • 1/2 pound beef jerky charque
  • 1 onion finely chopped
  • 2 tomatoes diced
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 2 cloves of garlic minced
  • 1/4 cup vegetable oil
  • 4 cups beef broth
  • Salt and pepper to taste
  • 2 eggs
  • 2 ripe plantains
  • Optional: peas carrots, or other vegetables

Instructions

  • Prepare the Beef Jerky:
  • Soak the beef jerky in hot water for about 30 minutes to soften it. Drain and shred the beef into small pieces.
  • Cook the Vegetables:
  • Heat the vegetable oil in a large pan over medium heat. Add the chopped onion, garlic, tomatoes, and bell peppers. Cook until the vegetables are soft and fragrant.
  • Add the Rice and Beef Jerky:
  • Stir in the shredded beef jerky and rice. Cook for a few minutes, allowing the rice to absorb the flavors from the vegetables and beef.
  • Simmer:
  • Pour in the beef broth, add salt and pepper to taste, and bring it to a boil. Reduce the heat to low, cover the pan, and let it simmer until the rice is fully cooked and has absorbed most of the liquid, about 20 minutes.
  • Fry the Eggs and Plantains:
  • In a separate pan, fry the eggs sunny-side up. Peel and slice the plantains, then fry them until they are golden brown and crispy.
  • Serve:
  • Serve the Majadito hot, topped with a fried egg and accompanied by fried plantains.
