Prepare the Beef Jerky:
Soak the beef jerky in hot water for about 30 minutes to soften it. Drain and shred the beef into small pieces.
Cook the Vegetables:
Heat the vegetable oil in a large pan over medium heat. Add the chopped onion, garlic, tomatoes, and bell peppers. Cook until the vegetables are soft and fragrant.
Add the Rice and Beef Jerky:
Stir in the shredded beef jerky and rice. Cook for a few minutes, allowing the rice to absorb the flavors from the vegetables and beef.
Simmer:
Pour in the beef broth, add salt and pepper to taste, and bring it to a boil. Reduce the heat to low, cover the pan, and let it simmer until the rice is fully cooked and has absorbed most of the liquid, about 20 minutes.
Fry the Eggs and Plantains:
In a separate pan, fry the eggs sunny-side up. Peel and slice the plantains, then fry them until they are golden brown and crispy.
Serve:
Serve the Majadito hot, topped with a fried egg and accompanied by fried plantains.
