Ingredients

  • 2 cups mixed mushrooms portobello, cremini, shiitake
  • 2 cups leafy greens spinach, arugula
  • 1 cup diced tomatoes
  • 1 cup diced cucumbers
  • 1 cup sliced bell peppers
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  • Prepare the Mushrooms: Clean, slice, and sauté the mushrooms in olive oil until tender.
  • Chop the Vegetables: Dice tomatoes, cucumbers, and bell peppers.
  • Mix the Greens and Herbs: Combine leafy greens in a large bowl.
